Li Shunqing, the grandfather of Li Shanlin and the founder of Family Li’s Imperial Cuisine, was a second-class minister of the Imperial Household Department during the reign of Tongzhi and Guangxu of the Qing Dynasty. One of his main duties was to examine the menus for the royal family. After he resigned, he wrote down the dishes in the menus and the recipes kept in his memory. From generation to generation, Family Li’s Imperial Cuisine has come into shape. It was not until 1985 when Mr. Li Shanlin opened a restaurant in his own house that people finally got a chance to enjoy the mysterious imperial meal of the Qing Dynasty. Family Li’s Imperial Cuisine imitates the selection and production process of royal cuisine served for Empress Dowager Cixi, and sees to it that all materials are purely natural, traditional processing methods are used, and degree of heating is sufficient, so as to produce superb and unique delicacies.
